Wazuka, Kyoto Prefecture
Wazuka produces more Uji tea than anywhere else in Kyoto Prefecture — a region known for centuries as home to some of the finest green tea in the country. But it's also a place quietly running out of time. The farmers there are ageing, their children leaving for the cities. Fields tended for generations are slipping into disuse, one after another, with no one left to take them on.
The Craft
The Decision
Jack and his partner left southern Thailand and moved to Wazuka, drawn by nothing more complicated than wanting to grow something good, close to the land, without hurting it.
The Approach
No pesticides, no chemical fertilisers. Just attention to the soil itself — keeping it alive with the organisms that naturally belong there.
The Harvest
In spring, when the new leaves come in, the farm opens to visitors. Hands in the leaves, tasting what that season's harvest actually tastes like.
Your Cup
Slow work. It takes longer, costs more, asks more of you every day. But it's the only way to do it properly — and it shows.
